 It was Father's Day on Sunday here and I decided that, if I were a good wife, I should bestir myself and cook supper for Resident Chef.  Daunting task, but I thought I was up to it.  For those of you who don't know, Resident Chef does all the cooking here and has since he retired in 1999.  Prior to that it was my chore responsibility.  So, simply because you never know what you might find here at Chez Magpie, here are the recipes I used...


CHERRY TOMATO SALAD

4 c. cherry tomatoes, halved
chopped fresh oregano/basil (combination)
1 thinly sliced onion

1/ 4 c. olive oil                       3 T. balsamic vinegar
2 tsp. Dijohn mustard          2 tsp. honey
2 cloves minced garlic
S & P to taste

 

POTATO-SAUSAGE FOIL PACKS
1 ea.  green, yellow & orange pepper
   cut into 1” chunks
1 pkg. smoked sausage – cut in ½” slices
2 large potatoes – 1” chunks
3 Onions – chunked as above
6 cloves garlic, minced
4 tsp. each lemon juice & olive oil
½ tsp. pepper
chopped fresh basil, oregano & Parsley (to taste)
    
    combine all and divide into four large
pieces of foil.  Seal and bake (on cookie
Sheet) at 425 for 35 mins.

 PEANUT BUTTER CHOCOLATES

2 ¾ c. icing sugar
½ c plus 1/3 c. peanut butter
½ c. melted butter
2 c. semi sweet chocolate chips
½ tsp. shortening or margarine
     Beat sugar, peanut butter & melted
butter til smooth.  Roll into 1” balls.
Melt choc & shortening in Microwave  til
melted.  Dip balls & place on wire rack
over waxed paper.  Refrigerate.

    1. I didn't hear any complaints from his side of the table so I guess it was okay. That's not to say I enjoyed the process though! I was very happy to relinquish the kitchen back to him.

  2. What a great menu!! You did yourself proud!! ;))) I definitely want to try that potato/sausage foil packet--sounds so yummy and easy...(What kind of potatoes did you use--peeled/or skins on???) thanks for sharing...;)))

    We have my daughter and family coming Sunday for the first visit since Covid shutdown. We get to see EVERYone in person!! YAY!! All have had 2 shots now, so it will be great!!

    Spaghetti (with Tom's own homemade sauce and meatballs), tossed salad, and garlic bread...I still need to figure out dessert...
    Maybe Italian Ices...would be a nice finish after the sauce...with special cookies? We'll see...

    1. The foil packets were tasty....and I used Yukon Gold potatoes and peeled them because this time of year they're not the greatest. If it were the fall and the potatoes were newer I would definitely leave the skins on. You can cook them on the BBQ for about the same time.
      Enjoy your family visit on Sunday - lucky you! Still only one shot for us - and our son hasn't been able to even get the first one yet so it will be awhile before we can see them.
      As for Italian Ices - I think those chocolates would be tasty with that (but then again, doesn't chocolate go with everything?!_)

    1. I didn't hear any complaints so I guess he liked it. He trundled the recipes into the vicinity of my computer with a request to print them onto recipe cards, so I guess that means something?

  4. Mary Anne you are so thoughtful to cook dinner for your Resident Chef on his special day. Your menu does sound quite delicious. Thank you for sharing it. Has Summer arrived at your location? We are sweltering and need rain desperately.

    1. I suppose it doesn't hurt me to cook supper once a year!! Certainly don't want to make a habit of it though. We thought summer had arrived, but last night it got down to single digits again and it's cool again tonight. Hope you get a break in the heat and some rain!

  5. Well now you've done it. You've gone and made me hungry. Mouth watering ideas. I've made pockets with hamburger on the campfire many times. Learned as girl scout leader. The sausage is now a must try.
