Recipe(s)

We were gadabouts yesterday and spent today awaiting delivery of this....

Our previous cupboard/small island is one the Resident Chef made when we moved here fifteen years ago and it has served us well.  Sadly the drawers no longer work properly and we were fed up with playing the "Will It Close Or Won't It' game so we parted with an obscene amount of money to have this one professionally made.  It's extra high because we're both tall and also has heavy duty casters so it can be moved easily.

So...it's been awhile since I shared a recipe with you.  I know some of you are suffering from a glut of cucumbers this time of year, so perhaps you might want to give either (or both!) of these recipes a try.

REFRIGERATOR PICKLES

1 c. white or apple cider vinegar (we use white)
1 c. water
1 c. white sugar
1 tablespoon (total) of either fresh minced garlic,
sliced chilies; peppercorns, pickling spice, mustard seeds,
bay leaves or coriander seeds (choose whatever
are your favourites, as long as it's 1 T. overall)
1 heaping tsp. kosher salt
2 lbs. sliced cucumbers (you can replace some of the
cucumbers with pearl onions or sliced red or
sweet onions)

Peel and slice veg's into 1/4" slices and pack into clean jars leaving about 1" headspace.  Heat water, sugar, spices and salt over medium heat, stirring occasionally until dissolved.  LET COOL COMPLETELY.  Pour cooled brine over
veg's making sure they're completely covered.  Cover and refrigerate at least three days before serving.

FREEZER PICKLES

10 medium cucumbers, thinly sliced
3 medium onions, thinly sliced
1 large green pepper, chopped
3 tablespoons salt
2 c. sugar
1 c. white vinegar
1 tablespoon celery seed
Crushed ice
Combine cucumbers, onions, green papper and 2 tablespoons salt.  Cover with crushed ice and mix well.  Refrigerate 8 hours.  Drain, rinse, and drain again.
In large saucepan, combine sugar, vinegar, celery seed and remaining salt.  Bring to a boil and cook and stir one minute.  Spoon over cucumbers.  Pour into jars, leaving 1" headspace.  Cool.  Top with lids and freeze.

- You might enjoy spending a few minutes going to a really great quilt show HERE.

- Our little boys are a bit too old for THIS, but had I seen it a couple years ago I would have definitely made them one.

- If you want to make a cute 'emotional support' chicken that seem to be all the rage right now, how about THIS one.

- THIS little guy made me smile.  And so did THIS fellow.  And THIS one simply made me laugh out loud.

Today's quote is from William Arthur Ward..."Leadership is based on inspiration, not domination; on cooperation, not intimidation"

  1. That's a very nice cabinet. And being on casters is a big plus. I have an island thing on casters which is so useful. Also I'm small and it's a good height for me, lower than the counters. Is anyone the right size for standard countertops?

    1. Standard countertops certainly have never worked for anyone in our family. We don't have a choice for the other cabinets in our kitchen but at least we have this one that's the correct height for us.

  2. What a lovely new cabinet!! Great that it a convenient height for you both...DH has begin putting wheels on a lot of our things as he likes to move furniture (!!) around quite a lot...and "ye olde bod" doesn't always cooperate!!
Have a great weekend hugs, Julierose

    1. The cabinet can't be anchored to the wall so it has to be moveable because it's surprising how much 'stuff' gets dropped down behind and around it. Yes, you're so right about 'ye olde bods'.

    1. We're certainly happy with it (haven't heard the RC swear even once today, so it must be a good thing!)

  4. Such a great cabinet! I rather love the blue mixmaster. =) Such a joy to stroll through the gallery of quilts; thank you. I never cease to be amazed at the artistry and skill of quilters. Every single quilt is superb.

    1. I love the blue mixer too, even though I've never used it. It's too darned heavy to move in and out of a cupboard so it has to sit out. The RC uses it a lot so it was worth the investment. The cabinet is worth it too!

  5. That's a beauty of a cupboard and I really like the idea of wheels. Thanks for the links too!

    1. The RC is certainly pretty happy with the cupboard. We asked them to put it on heavy-duty casters so we can move it easily.

  6. my mom would have crocheted that little dragon for me - she was so good at fiddly things that my hands would never let me make - yeah, amigurumi is not in my skill set...

your rolling cabinet is awesome!!! and your blue mixer is, too!!! our big black monster mixer has to sit out, eating up a chunk of counter space cuz neither of us can lift it - i made a little mat to slide it in and out of the corner cuz it's so stinkin' heavy

    1. I love dragons but I doubt I'll be making that little guy. As for the mixer, I know what you mean. It's beyond heavy (I can't even begin to lift it). Good idea for a mat beneath it...will have to see if I can come up with something.

    1. Extra counter space is really a good thing in our dinky little kitchen and it's even better that the new cabinet is built higher than the norm to suit us tall people.

  9. That cupboard is handy. I just loved the variety of quilts that were featured in the 2025 awards. I see a lady from Ontario won best in show. Such talent shown in those quilts.

  10. That cabinet is very pretty. And those little chickens are adorable! I'm normally not even tempted to do amigurumi anymore, but those are tempting. :)

    1. We're certainly happy with the new cabinet even though it cost us a small fortune. I don't do much amigurumi either but sometimes something catches my eye.

    1. Our old cabinet just fit in that corner of the kitchen so we wanted a replacement that would do the same.
